For centeries, the major problem with food has been food shortage, but in recent years, over abundance has become the new concern for people. Diseases like obesity and diabetes have haunted people for decades. But how did this dramatic change happen so suddenly?
Why the change?
Ever since world war two, women who used to be in charge of the whole family’s diet entered the work force. At the same time, rapid development in food production and processing created many fast, convenient foods. Both factors led to people eating less homemade meals and more processed food instead. But processed foods are usually higher in calories, and they are usually designed to be snacks, so we maght be eating them all day and not even realize it! Another thing worth noticing is that people are doing less exercise. Machinces rise and humans move from factories to offices. Gaining weight is much easier if your sitting by your desk all day. So generally, people are taking in more energy than they need.
Making a move
Soon enough, people started to notice that something was going wrong. The food industry made a quick move to introduce “low fat” products to consumers. However, simply reducing the amount of fat in foods would destroy the appealing taste,so manufacturers added sugar. Not only did this strategy save the flavor of of foods,it also increased their shelf life. Sugar was everywhere! Of course, this idea didn’t fix the previous problem at all, since sugar also provides excess energy if eaten in the wrong amount. So nowadays, processes food is still a big problem for health.
